Preparation…and a new sponsor!

This past week has been a whirlwind, there are only five weeks left until we leave Burlington! We had a friend visit from Portland, ME this weekend and it was great to see him (hey Sasha!). We ventured out yesterday with Sasha and another friend for a 6 mile hike up Camels Hump. There was at least 6 inches of fresh snow on top of what seemed like 4 or 5 feet of base snow. We snowshoed up and “boot skied” down the other side.

IMG_3235We spent the hike up the mountain catching Sasha and our friend Em up on our hike preparation, gear, food, travel plans, and what is next come fall. Sasha plans to hike the John Muir Trail this summer, sadly it will be about a month after we pass through. After a great hike on Saturday, we spent most of today working on food preparation. We hit the grocery store at 9 am this morning to scope out prices, food, and purchase a bunch of things for our first round of dehydrating!

IMG_3241After we went to the “big” grocery store, we went to City Market for the bulk food section, spices, and everything else. I will miss the huge selection of coconut ice cream that City Market has so much! Once we got home, some friends joined us for brunch and then we spent the rest of the day prepping and dehydrating a test batch of meals for the trail. Thanks to my friend Cass, we have a dehydrator to help us make tasty vegan meals.



One other exciting thing we wanted to share is our latest sponsorship from Raw Revolution!! They are going to be sending us a ton of their raw, vegan bars for the hike. I am so stoked to have their support- trying to maintain a vegan diet on the trail is a unique challenge for me. Luke isn’t vegan but is super supportive of eating delicious and healthy food as much as we can, so thanks Raw Revolution for helping us make that happen!   1. This couple is also vegan. Check out their food suggestions. They hiked the PCT in 2012 and just started at AT.

    • It’s working well! Sweet potatoes, kale, quinoa, beans & rice and broccoli so far. We’ll let you know how they turn out
